Masala chai »
bring water to boil in pot on stove
add crushed fresh ginger - about 2 slices per cup
when water and ginger boils add
masala (ground cinnamon, cardamom, star anise, clove)
add tea (1 tsp loose per cup)
put lid on pot, turn off heat and let sit 3 min.
add milk, maybe some sugar, pour into cups
Breakfast Porridge »
into 4 cups water in pot on stove
add 1/4 cup millet, 1/4 cup amaranth, 1/4 cup raisins
after low boil for about 15 min add
1/4 cup cornmeal, long cooked oats to thicken
and about a tblsp masala spice
turn off heat,
add blueberries after oats have cooked,
put lid on and let sit a bit
top with yogurt and maple syrup
Ginger/Lemon cold drink »
juice from 5 lemons, 1 cup sugar (I use natural cane sugar)
and 3 inches of fresh ginger peeled and crushed
prepare and mix the above in a container or large measuring cup
you can store this concentrate in the fridge until you are ready to add the water and make the drink
